Nutrition is complex. It’s not only about what we eat, but also about when we eat and how we eat it. In all circumstances eating a plant-based diet is best, whether that be a plant-based diet paired with animal-sourced food or not.
But plants, like everything else in nature, are complicated! We usually eat the most nutrient-dense parts of the plant, but these are often the storage pods of the plant. It is where they lock up their nutrients until they are ready to use them to grow. Nuts, seeds, grains and beans are very nutrient-rich, but often have barriers to absorption in our intestinal tracts. There are steps we can take to make these nutrients more accessible.
